The grinds should ALL be of equal size after grinding. try the ratio of 1 tablespoon of grinds per cup of water and go from there depending on how strong you enjoy your coffee. the water should be from 190 to 200 degrees fahrenheit. If you are going to use your beans within two weeks, keep the beans in the refrigerator otherwise for longer periods put your beans in the freezer to preserve the flavor.
